A powerful, concentrated Cabernet Sauvignon. Impressive for the sheer density of fruit, namely blackberries, cherries and chocolate, accented with buttery, caramelized new oak perfectly in keeping with the wine’s volume. The tannins are soft, sweet and intricate. Despite the richness, There’s a firm minerality that adds to the structure and grounds it. So opulently delicious, you could drink it now, and it should develop in the bottle over the next six years, at least.
Firm, dense, tannic and chewy, but with a wealth of flavors and nuances, showing black licorice, graphite, blueberry, charcoal, currant and spice character. Full-bodied and very tight in a good way, as the flavors are slow to unravel. Best from 2013 through 2021.

Fragrances of Sherry, flowers, vanilla, dried fruits. Mellow, and long in the mouth. A fabulous balance between sherry’s warmth and the fresh flavours only barley can produce. Fabulous demonstration of a whisky matured in a very impregnated sweet PX Sherry cask. Its label does not indicate time spent in wood because the whisky’s maturity is reached differently in every cask. Age is only one of the complex factors on which maturation depends. Blossoming Auld Sherried is the perfect demonstration of sherry impregnated wood’s greatest significance.
More than an exceptional Single Cask , High Privacy is a fabulous homage to Mr. Michel Couvreur. This emotionally charged Whiskey , distilled on July 23, 1998 already presented 20 years ago an exceptional character. After a long evolution in PX cream barrels, meticulously overseen for several years by the famous revolutionary and passionate himself, High Privacy today offers power and refinement, through a sublime peaty flavor, with notes of liquorice and peat bog. A balanced Single Cask , of an impressive aromatic richness, in a palate that knows how to remain suave.
About Michel Couvreur Michel Couvreur, originally from Belgium, ages Scotch Whisky in the heart of Burgundy (Bouze-Les-Beaune). In the 1950’s he arrived in Burgundy to make and market wine. He took frequent trips to England and Scotland where he sold his wine, but was particularly drawn to Scotland for the fabulous fishing and hunting. In 1956 Michel Couvreur moved to England and in 1964 to Scotland where he became involved in the production process of whisky made from a selection of the most ancient strains of cereals and using extremely rare sherry casks.
The industry was changing in the whisky production and the old methods were being replaced by new cheaper ones. The old sherry casks traditionally used were replaced by steel or plastic so Michel returned to France in the 70’s to be nearer to where the sherry casks originate. He dug his own cellar in the hillsides of Bouze-les-Beaune, about midway between the Andalusian vineyards and the Scottish Highlands. His scotch matures there in these rare sherry casks; Pedro Ximenez and/or Palomino. The cellar is a 500-foot tunnel with galleries, kept humid by natural springs running through it. A small room far from any light called ‘the paradise’ shelters some rare, old and elegant nectar, carefully kept in sealed demijohns. The very humid cellar is the main factor behind the fast alcoholic reduction of the whiskies in their casks. The very fragrant floral and fruity aromas can therefore develop ideally and give Couvreur’s whiskies indeed a rare freshness while they age twice as fast.

WHO IS THE BOXER?
‘Mollydooker’ is old Aussie slang for a left handed boxer and our Boxer always punches well above its Fruit Weight™. Did you notice he has two left-handed gloves?
TASTING NOTES:
Rich and deep, the 2021 Boxer is both elegant and powerful, with beautiful notes of fresh plum, mocha and liquorice lifting out of the glass. A soft plummy mouthfeel, well measured tannins and slightly toasted oak compliment the rich fruit, creating a wine with many layers.
TECHNICAL NOTES:
The grapes were grown on vineyards in McLaren Vale and Langhorne Creek. The Boxer has been Barrel fermented and matured in 100% American oak, using 45% new, 25% one year old, and 30% two year old barrels. The required Marquis Fruit Weight™ for the Lefty Series is 65% – 75%. The Actual Fruit Weight for 2021 The Boxer is 68%.

Notre Vin, which means “our wine” in French, produces a Howell Mountain Cabernet Sauvignon, a Napa Valley Cabernet Sauvignon sourced from the Howell Mountain foothills, a Rosé from Howell Mountain Cabernet Sauvignon, and a Burgundian-style Sonoma Coast Pinot Noir. All wines are crafted in very limited quantities.
2007 tasting notes
This dark garnet Cabernet Sauvignon from the 2007 vintage exhibits a fabulous nose of crushed rock, graphite and cedar, layers of sweet black and blue fruits intermixed with cocoa powder, walnut, fresh almonds and scents of freshly roasted coffee. In the mouth this wine shows concentration, great richness and volume with a sense of freshness and energy together with that noble sweetness of tannin with stunning purity as well as a layered sensual finish. The aftertaste leaves you with delicious flavors of blood orange and tangerine. When young, our 2007 Howell Mountain was massively tannic and just recently started to open up. It is a beauty that can be enjoyed now, particularly with decanting, however it will benefit from more time in the cellar.

The world’s most luxurious, prestigious Cognac. Richard Hennessy is an incredible blend of over a 100 finest quality eaux-de-vie, a number of which date back as far as the early 1800s. Richard Hennessy is an astonishing spirit, created in honour of the founder of Hennessy Cognac.
Nose: A balanced and utterly refined nose that gives way to sublime suggestions of spices and blossom, the intense age of the Cognac shines through in layers of perfectly honed oak, black pepper and vanilla sweetness. Absolutely mouth-watering.
Palate: Thick and juicy with waves and waves of spice and all sorts of fruit; from ripe and juicy to stewed and deep. Stunning oak interplay.
Finish: Very, very long. The exceptional, flawless movement of oak, spices and fruit leaves you speechless.
Baffonero takes its name from a vineyard, 100% Merlot, that was one of the first to be planted at Rocca di Frassinello. The company was born of a joint venture between Castellare di Castellina and Domaines Baron de Rothschild-Lafite, the most famous chateau in the world. The Baffonero vineyard lies below the winery designed by Renzo Piano, on terrain with perfect exposure.
Royal Choice by Speyside Distillers Spey, Single Malt Scotch Whisky, Scotland 70cl / 46.0%
In 1815, when Lord Byron married Annabella Milbanke at Seaham Hall, he gave a cask of ‘SPEY’ whisky to King George III as a gift. The royal connection to SPEY whisky has continued in other ways, including this single malt from the Speyside Distillery – the SPEY Royal Choice. It was produced exclusively under licence for the charity Historic Royal Palaces, and features an image of the Tower of London on the label, as well as some classic Royal Blue. This deluxe single malt is presented in a handsome, wooden presentation box.
The pinnacle of the range, Spey Royal Choice is crafted from some of the oldest sherry casks at the distillery. Rich and spicy with a long finish.
