Edition No. 3 brings to life the flavour experience of The Macallan through aroma, calling on Master Perfumer Roja Dove’s remarkable sensory knowledge and expert sense of smell to create the third unique expression in the series. Borne of two art forms, Edition No. 3 unites the worlds of whisky and aroma to reveal the complexities of single malt character and the power of the senses in creating and experiencing The Macallan. When we experience and enjoy whisky, the power of aroma is unquestionable – and it is this power that makes the approach to Edition No. 3 truly mesmerizing.

Macallan Edition No.5 Bottling Note
The Macallan Edition series continues with the 5th release, and this one is all about the natural colour of the whisky! Celebrating the natural colour of the whisky, imparted by its time maturing in oak casks, Macallan teamed up with Pantone to create a rather fetching shade of purple which features on the label and presentation box. Very snazzy stuff.

Tasting Notes
Nose: Toffee apple, poached pair, savoury hints of sage. Flashes of clean citrus notes.

Palate: Nuttier on the palate, with walnut and macadamia nut appearing as it opens. Continues on to orchard fruits, honeycomb and a kick of oaky black pepper.

Finish: Butterscotch, cedar and lemon.

TALES OF THE MACALLAN RIVER
The sixth and final release in the The Macallan Edition series, Edition No. 6 takes its inspiration from the natural wonders of the legendary River Spey and The Macallan Estate, where each and every cask of The Macallan is matured before being hand-selected for use by our expert whisky makers.

All of the five distinct casks types used to create Edition No. 6 have been hand-picked by The Macallan Whisky Maker Steven Bremner. He drew inspiration from unique stories related to the river and surrounding landscape. The American and European oak casks have been selected to create a flavour profile that will deliver a multifaceted experience; from the appealing rich brass natural colour, to the layers of aroma, followed by the deep and rewarding flavour.

The legendary River Spey flows through the Estate and is globally renowned as a home to the mighty Atlantic salmon. The Macallan Ghillie is a custodian of the River Spey and advocate for sustaining the wildlife in and around it. On our one-and-three-quarter mile stretch of river, a fortunate few can test their skills in the hope of catching – and releasing – wild Atlantic salmon using Hardy’s incomparable tackle.

Wild Atlantic salmon are at risk of becoming an endangered species. Therefore The Macallan are working with the Atlantic Salmon Trust to help raise awareness of this, and to support vital conservation work on the River Spey and beyond.

The Macallan Edition No. 1 is the debut expression in the Edition Series. It celebrates The Macallan’s unparalleled oak cask management policy that oversees the entire process from wood sourcing, to finished, seasoned cask. It also showcases the profound influence of The Macallan’s exceptional oak casks into the flavor of the whisky. The result is a bold single malt drawn from eight of the finest European and American oak cask styles and sizes, sherry-seasoned and aged to perfection before being combined to create this rich and multidimensional whisky.

The character of each cask style lives within the whisky, creating a taste journey that begins with soft oak notes and takes one’s palate to deeper, richer flavors. When married, these casks bring together a distinctive flavor profile that highlights The Macallan’s complexity and diversity. Bottled at a higher strength of 48% ABV for a fuller, richer flavor.

The distinctive and dynamic character of Edition No. 2 has been shaped not only by the use of seven exceptional oak cask types from four different bodegas but by the creative spirit of each of the four collaborators; combining flavours to reflect each of their distinctive personalities in the resulting whisky.

While the case could be made for any Michel Couvreur creation being unique in the world of whisky, his single malt, The Unique, is something extra rare. It marries malted and unmalted cereals to produce a rounded flavour that’s one of a kind.

Michel Couvreur has been producing whisky in Burgundy since 1978, and has established himself as the region’s authority on the subject. He takes the finest whiskies from Scotland and ages them to perfection in his secluded barrel caves. With such a limited supply, each bottle he makes is one of the ultimate treasures you can attain in the whisky world.

With an almost vanilla sweetness, this already nuanced whisky takes on the flavours of its oak barrel, and produces a single malt like none other.

The Unique” is obtained from the distillation of wheat and ages for 4 years in wooden barrels. Delicate scents of caramel, spices and vanilla anticipate a slightly sweet and soft taste with pleasant caramelized touches, with a good persistence.

Tobermory 20 Years Single Cask by Sansibar (IB) 124 bottles, 70cl, 49.6%

1994 to 2014

Sansibar Whisky is an independent bottler. It was in 2012 when the company commenced their business and initially they were eyed with critical distrust. However, single-cask bottlings with the logo of Germany’s most famous beach restaurant have won a large community of devoted fans within a very short time.

Sansibar Whisky is actually the brainchild of Carsten Ehrlich, the organizer of the Whisky Fair Limburg and Jens Drewitz. Eric Huang of Spirits Shop Selection and Jens have been friends for a very long time, and they’ve had many a dram together in all these years. Eventually, while sitting over some drinks, they had the idea to create a combination of dine, wine and whisky.

Sansibar Restaurant on the isle of Sylt was their first choice, because that’s just a top brand. But of course the people at Sansibar hadn’t been waiting for Jens and Carsten. It took three years before they could convince the owner of Sansibar. At first, everyone had different ideas on how the business should be run. Finally, we agreed that they search and purchase the barrels, then bottle the whisky under the label of Sansibar and make these bottles available at the restaurant.

Sansibar is a trademark that belongs to Herbert Seckler, the owner of Sansibar Restaurant. Sansibar Whisky is an independent company.

There is good reason for such a success: the people behind the company are old hands in the whisky business.

Travellers Distillery 11 Years Rum Belize, Kill Devil (by Hunter Laing), 46% 70cl

Whilst we are specialists in blended and single malt scotch whiskies, over the years we have been fortunate enough to acquire stocks of aged rums, from places such as Guyana and Jamaica. We are pleased now to present some of these to our customers on the basis, of course, that they meet the same exacting quality standards required for our bottlings of whisky.

NOSE : Rich and warming with subtle hints of sweet spice and sandalwood.
PALATE: Mouthcoating, robust and smooth imbued with luscious spiced fruits and cloves.
FINISH: Long, lingering and uncompromisingly luxurious.

NOSE: Fresh, lively, malty and light, some green apple, honeycomb and nuts.
PALATE: Full and soft with waves of chewy caramel. A hint of ginger syrup reveals a warming spiciness. Lovely neat,  but water develops the spiciness with notes of red fruits like pomegranate.
FINISH: Dry and fairly long. Crushed brazil nuts.

NOSE : Initial aromas of honey suckle, banana, melon, pear, gooseberry and floral notes of violets. The notes deepen into blossom honey, red currants, rhubarb and ginger.
PALATE: Signature sweet and floral flavour that can best be described as milk chocolate, Banoffee pie with coconut cream, and flambéed orange. The higher abv concentrates the sweetness.
FINISH: A short but punchy gingery finish.
